All Hail the Kale

Kale is a nutritional powerhouse — rich in vitamins A and C (micronutrients), calcium, potassium, and flavor.

Multiple varieties of kale lend themselves well to different recipes. Supermarkets tend to stock curly kale; other varieties include red Russian kale and Lacinato kale (a.k.a. black, dinosaur, or Tuscan kale). Here are a few recipes to get you started!
